Use this recipe if you don't have anything planned...

for dinner or lunch or breakfast or if you need a snack. :)
Have you ever looked at the clock and it is 4:30P.M. and you don't have a clue as to what you are going to make for dinner? This happens to me...quite often. When this is the case, I usually make breakfast for dinner. Why? Because I typically have all of the staple ingredients in the fridge or pantry. We love to eat German Pancakes or Pop-eye Pancakes (whichever you choose to call them) at our home. Yes, they are kindof fattening, but don't let that stop you from making them. You HAVE to ENJOY life!

Ingredients:
1/4 cup butter
1 cup all-purpose flour
1 cup milk (we use Vitamin D...the really fattening kind)
6 eggs, lightly beaten
1/8 teaspoon salt

Directions:
Preheat oven to 350 degrees. Melt butter in a medium baking dish (cake pan).
In a medium bowl, mix flour, milk, eggs, and salt. Pour the mixture into the prepared baking dish.
Bake on center rack in the preheated oven for 30 to 40 mins. until golden brown.
Serves 6.
Pour syrup and/or powdered sugar on your individual piece.
Eat up!

If you split the batter between two round cake pans your pancakes will look like the ones at Smitty's! We love this recipe too! Breakfast for dinner is always great!
